INGREDIENTS
2 sticks unsalted butter, softened
1 cup white sugar
1 large egg
1 tablespoon vanilla extract
3 cups flour
1 teaspoon baking powder
Zest and juice of 1 small lemon
1/2 cup chopped almonds
DIRECTIONS
Cream the butter and sugar until light and fluffy. Add in the egg and vanilla, one at a time, combining well after each addition. Sift together flour and baking powder, and gradually add to the dough, mixing on low until all dry ingredients are combined. Stir in chopped almonds, zest, and juice until incorporated. Remove dough from bowl and combine into a ball. Wrap dough in plastic wrap and place in fridge to chill for at least 30 minutes. Dough should be firm, but easily workable. If it is too dry, add water 1 teaspoon at a time. Roll flat to ¼ inch, and cut into cookies. Bake at 350 degrees for 7-10 minutes.
